But how do we ensure such consistency in a product that is inherently natural and unique?

1: We get strict!
Yep, it starts with our rigorous selection criteria. Aubrey’s beef is sourced exclusively from proper beef cattle breeds such as Hereford, Angus, and Devon Red. These cattle are bred for beef, not dairy, ensuring the presence of the essential fat that adds flavour and succulence. The right breed is the foundation of our consistency and we can trace right back to the farm to prove we do what we say we will do.
2: Keep it ethical
Our cattle are reared on grass by experienced herdsmen, with access to clean drinking water. They are raised on pastures alongside their families until they are at least 18 months old. This longer rearing period, in contrast to dairy cattle, is key to developing the perfect beef. We have taken chefs on farm visits to see for themselves for over 35 years. Take a look here!
We ensure that our cattle are treated with the utmost care during transportation, maintaining their well-being.
3: The 1%
At the abattoir, we select from the top grade out of 54 different ones, ensuring that only the top 1% of the best beef cattle meet our standards.
4: The Science
Dry aging is a crucial next step. We purchase our beef on the bone and age it for a minimum of 28 days in specialist fridges. It’s all about science, not fashion, in this process! No Himalayan salt bricks here (we’ve done the work with meat scientists and feel they are just gimmicks). Proper dry aged beef is delicious and succulent and while we might lose up to 12% of the weight during the process, it’s absolutely worth it to ensure you get the very best.
5: Taste it
Friday is tasting day! To ensure the eating quality is consistently outstanding, every Friday, we conduct a blind steak tasting with a score sheet. We go to great lengths to ensure our beef is right for you every time because we believe it’s worth it.
