How to Cook Sirloin Steak

How you cook your steak is just as important as the cattle it came from. Your steak deserves to be cooked to perfection. This dry aged sirloin steak is from a heritage beef breed and it’s been matured for 35 days before our butchers have boned it out and crafted it into a sirloin steak. One of the most important things about cooking a steak is taking it out of the fridge at least 20 minutes before cooking it to bring it up to room temperature. If you cook a steak when it’s cold it leads to the fibres constricting – resulting in the steak becoming tough. One thing most people agree on is: Do NOT grill your steak using a domestic grill. What you are trying to do is to get that caramelisation on the outside – very few domestic grills have the power to do that.

What you will need

  • High quality sirloin steak
  • Sea Salt and black pepper
  • Tablespoon of butter 
  • Tablespoon of Olive Oil

A step-by-step guide

  1. Warm a plate to rest the steak on after cooking.
  2. Generously season your sirloin steak on all sides with some great quality sea salt. Add a few grinds of black pepper.
  3. Get your frying pan very hot and then turn it down a little.
  4. Add some olive oil to the pan.
  5. Once the oil is hot, add your steak to the pan fat-side down in the pan. Once the main bit of fat is nice and brown, do the opposite side for just 30-40 seconds.
  6. Turn the sirloin steak over and pour some of the beef fat over the top using a spoon.
  7. Cook for about two and a half minutes each side for medium – rare.
  8. Add a good tablespoon of butter when you are on the last side and spoon over the steak to baste.
  9. Leave your sirloin steak to cook for about another minute, spooning the butter and the beef juices over the steak during this time.
  10. When you’re happy with the caramelisation take the sirloin steak and rest it on a warm plate for at least 6-7 minutes.
  11. While it’s resting you can continue to baste it with the cooking juices.
  12. Carve using a really sharp, straight-edged knife.
