Through our exclusive wholesale partnership between Wyndford Wagyu, one of the UK’s leading full-blood Wagyu producers, this extraordinary beef is now available in some of the finest kitchens across the country. Wagyu from Aubrey Allen offers the remarkable marbling and luxurious texture that has made Wagyu world-famous. Each carcass is graded and scored on it’s marbling prior to arriving at our unit.

Why Full Blood Wagyu?
Full Blood Wagyu refers to cattle that possess 100% Wagyu genetics, with no crossbreeding.
Many Wagyu products available are actually crossbred cattle, typically Wagyu crossed with Dairy Cattle breeds such as Holstein. These animals do not deliver the same level of marbling or consistency found in true full-blood Wagyu.
Wyndford Wagyu and Aubrey Allen specialise exclusively in 100% full-blood Wagyu, that is DNA tested and traced back to Japanese origins, equivalent to the coveted A5 grading system.
Expert Butchery: The Aubrey Allen Difference
Handling Wagyu requires specialist knowledge. Because of its delicate marbling structure, Wagyu must be butchered with exceptional care to preserve its unique qualities.
Not every Wagyu carcass is suitable for premium restaurant supply. Each one is evaluated to ensure it meets the required standards for marbling and meat quality. We receive whole carcasses directly from Wyndford Wagyu in Shropshire, allowing our butchers to break down the primals into whole muscles.
Wagyu cuts are prepared with precision to preserve the integrity of the meat and its marbling. At Aubrey Allen, experienced butchers use traditional seam butchery techniques to ensure each cut performs perfectly in the kitchen.
Where appropriate, Wagyu may be matured to enhance flavour and tenderness, creating a deeper and more complex eating experience. The result is beef that arrives in the kitchen ready to deliver exceptional results.
