Not every Wagyu carcass is suitable for premium restaurant supply. Each one is evaluated to ensure it meets the required standards for marbling and meat quality. We receive whole carcasses directly from Wyndford Wagyu in Shropshire, allowing our butchers to break down the primals into whole muscles.

Wagyu cuts are prepared with precision to preserve the integrity of the meat and its marbling. At Aubrey Allen, experienced butchers use traditional seam butchery techniques to ensure each cut performs perfectly in the kitchen.

Where appropriate, Wagyu may be matured to enhance flavour and tenderness, creating a deeper and more complex eating experience. The result is beef that arrives in the kitchen ready to deliver exceptional results.
