Cheese of the week: Buffalo Mozzarella

Buffalo mozzarella, also known as mozzarella di bufala, is a type of cheese made from the milk of domestic water buffalo.

It is made in Italy, particularly in the regions of Campania, Lazio, Apulia, and Molise, where water buffalo farming is prevalent.

Buffalo mozzarella has a soft, moist texture and a delicate, milky flavour with a slightly tangy edge.

Traditionally, buffalo mozzarella is produced using a technique called pasta filata, where the cheese curds are stretched and kneaded to achieve the desired texture.

This cheese is popular in a variety of dishes, including salads, pizza, tart, where its creamy texture and mild flavour complement other ingredients. We love it simply with tomato, basil & oil olive!
