When reviewing the meat-free products available across the market, we felt there was an opportunity to create something better. Many options lacked the texture, flavour and overall satisfaction that diners expect from a premium menu item.

Rather than creating an imitation product, our development team focused on producing something delicious in its own right.

The result is a carefully crafted patty made with mushroom, halloumi, onions, herbs and other premium ingredients, delivering a rich savoury flavour and satisfying bite.

At Aubrey Allen, our goal has always been to provide our customers with the very best products across their entire menu, not only their meat offering.

Our Mushroom and Halloumi Patty is made using carefully selected ingredients:

Halloumi – Cyprus

Gluten-free breadcrumbs – United Kingdom

Why did you choose these ingredients?

Every ingredient was selected for a specific reason, whether that’s flavour, satiation, texture, mouthfeel, or overall eating experience.

Importantly, we didn’t set out to create a meat substitute. Instead, we wanted to create a genuinely delicious non-meat patty in its own right.

During development, we found that many options on the market felt more like vegetable cakes or potato patties than true burgers. Our aim was to deliver the satisfying bite, texture, and indulgence that diners expect when they order a burger, while celebrating high-quality vegetarian ingredients.

How long has this product been in development?

The Mushroom and Halloumi Patty has been in development for 18 months.

We haven’t cut corners at any stage of the process. The same expertise, care, and product development ethos that go into creating our renowned beef burger blends have been invested into creating this Mushroom and Halloumi Patty.

We believe that commitment shows in the final product.

What has the development process been like?

Developing a vegetarian patty has been a very different journey for us and has involved plenty of learning along the way.

The earliest versions certainly weren’t where we wanted them to be. Through extensive testing, refinement, feedback from trusted partners, and countless trials, we’ve continued to improve every aspect of the burger from flavour and texture to cooking performance.

That willingness to challenge ourselves and keep improving is what has ultimately led us to a product we believe is genuinely outstanding.

How are you ensuring the same high Aubrey Allen standards are applied to this product?

Quality has been at the centre of the project from day one. The same standards that apply to our meat and cheese products apply to our vegetarian patty:

In fact, the project has involved expertise from across the business, including our Head Butcher, Leon, who has been involved since the earliest stages of development. While the ingredients may be different, our commitment to quality remains exactly the same.

Who has this product been designed for?

The burger has been designed for the same customers we serve across the rest of our range: chefs who want to offer exceptional quality to their guests. It’s ideal for any venue that offers a vegetarian option and wants a product that delivers on flavour, texture, and presentation. It also helps customers streamline their supply chain by sourcing both premium meat, artisan and chef’s essential cheeses, and quality vegetarian options from a trusted supplier.

Can you describe the flavour in three words?

If we had to choose just three, we’d say:
Rich. Satisfying. Flavourful.

Other words we’d use include indulgent, savoury, succulent, crispy, and distinctive.

How do you recommend cooking the burger?

For the best results, we recommend deep frying at approximately 170°C for around 4 minutes. This creates a deliciously crisp golden coating while maintaining a succulent, flavour-packed centre. The result is a burger with excellent texture and a fantastic eating experience.

Does this mean Aubrey Allen is moving away from beef burgers?

Absolutely not.

Our beef burgers remain a cornerstone of our business and continue to receive the same investment, expertise, and attention to detail they always have.
The vegetarian patty has been developed to sit alongside our existing range, giving customers access to the same Aubrey Allen quality regardless of dietary preference.

This isn’t about replacing what we’re known for. It’s about extending our standards of excellence to more areas of the menu.

What is the technical information?

Our Mushroom and Halloumi Patty comes in packs of 12 (2 patties in a vacuum-packed pocket with 6 pockets in a pack).
These patties are a frozen product and should be stored below 4 degrees Celsius at all times.
Once defrosted they should not be refrozen and should be cooked within 4 days. Must be thoroughly cooked before consumption.
