Cheese of the Week: Grande Reserva Pecorino

Grande Reserva Pecorino has a robust and slightly tangy flavour with nutty and earthy undertones. The aging process imparts a rich, savoury taste with a hint of saltiness, making it more intense than younger Pecorino varieties.

The “Grande Reserva” designation indicates that this Pecorino has been aged for an extended period, typically over a year. This longer aging process allows the cheese to develop a firmer texture and a more pronounced, complex flavour.

It can be easily grated or shaved over dishes or you can enjoy it as part of your summer cheese board. It pairs beautifully with honey, nuts & fruit or grate it over your risotto, pasta & salads.
