The Aubrey Allen Heritage Breeds programme supports both farmers and chefs to produce and showcase the best of British beef.
There isn’t much Aubrey Allen don’t know about exceptional beef. Traceability, quality, provenance, and sustainability are always our top priorities.
With vast experience in the livestock sector, we want to be more than just buyers. Our goal is to establish long-term, exclusive partnerships, to celebrate and support the finest rare breed cattle from the British Isles.
When we find a special breed, we welcome that into our Heritage Breeds programme. By working directly with the farmer and abattoir to keep these special breeds strong and available, we aim to bring chefs a point of difference for their menu and encourage a maintained supply for these breeds in the future.
All Heritage beef is matured in one of our four scientifically structured, dry ageing chambers for over 28 days, to further enhance the texture and flavour.

Heritage Breed supply can differ throughout the year, which is inevitable with this kind of specialist programme and Aubrey Allen’s high standards. However, we regularly see the following special breeds become available:

| Blue Albion | A critically endangered breed, recognised on the Rare Breed Survival Trust Watchlist |
| White Park | Among Britain’s most ancient breeds, lean yet richly flavoured, with an almost gamey depth |
| Hereford (Traditional / Prime) | Celebrated for its succulence and tenderness, Hereford Beef has been perfected over generations |
| Galloway / Belted Galloway | Produce exceptionally flavoursome, fine-grained beef with natural marbling and a distinctive sweetness |
| Luing | A cross of Shorthorn and Highland renowned for its rich flavour and consistent marbling |
| Lincoln Red | One of Britain’s oldest beef breeds, known for their robust, succulent, and full-flavoured meat |
| Sussex Cattle | Their easy-finishing nature produces beef with excellent tenderness and a rich, savoury profile |
| Red Poll | Admired for producing finely textured beef with a clean, sweet flavour |
