South West Lamb
New Spring Lamb with PGI Status, expertly butchered with full carcass utilisation
Quality lamb from the South West of England
We source exceptional South West lamb, renowned for its PGI status (Protected Geographical Indication), outstanding flavour, and natural quality. Raised on coastal pastures in the South West of England, our British lamb benefits from rich grazing, fresh sea air, and high welfare farming, producing consistently tender, flavourful meat trusted by chefs across the UK.
Only 8 in 100 lambs make the Aubrey Allen grade – our lamb is sourced from carefully selected farms across the South West, where sheep are naturally reared on lush, mineral-rich pastures. This unique environment, combined with expert farming practices, produces lamb with exceptional texture, depth of flavour, and consistency. PGI status reflects the region’s ideal climate, grazing conditions, and farming heritage, ensuring every cut of our South West lamb delivers superior taste.
We always undertake full carcass utilisation, which uses every cut from the carcass. This minimises waste and forms new dishes through the use of unfashionable cuts.

Lamb Pavé is a great bit of lamb – big on flavour and tender. We created a dish using the lamb paves from the ‘Product of the Week’ , served with chorizo, wild garlic and white bean ragu and wild garlic aioli and it sold out at lunchtime.
