Spotlight on: Lindley
Our Seasonal Spotlight for Spring is Lindley, a soft and creamy, mousse-like cheese.
- Made by Jake Goldstein at Primrose Creamery, Lindley is a soft, Jersey cream-enriched cheese made with raw cow’s milk.
- The extra cream gives it its signature texture: Dense, whipped, and almost mousse-like when young.
- It ripens into a plush, spreadable paste that feels indulgent without ever tipping into heaviness, while melting effortlessly on the tongue.
- Its flavour reflects the richness. Early on, it’s fresh and lactic: crème fraîche, cultured cream, and the faint earthiness of button mushroom and steamed rice. As the days pass, the profile deepens: clotted cream, almond, baked apple, and a soft savoury warmth beneath the sweetness.

Meet The Cheesemaker
Jake Goldstein at Primrose Creamery
Nottinghamshire-based Primrose Creamery began with a simple idea: that good food connects us to where we come from. They wanted to make something that felt honest with a way of working that respects what’s already part of the infamous Welbeck Estate: the land, the milk and the people who came before.
Their cheeses are made by hand in small batches, with patience and care. Each one is named after an ordinary person from local history. People whose lives left no monuments but shaped the place all the same. A girl who milked a small herd – Elizabeth Lindley. A farmer who stood by his cheese until the end – William Eggleston.
