We typically choose only the top 4% of beef cattle from breeds such as Angus and Hereford from the South West of England and the North West of Scotland.
Tunworth: Made by Stacey Hedges since 2004, and now ably assisted by Charlotte Spruce, Tunworth is a serial winner of awards. In 2006 it was awarded Supreme Champion of the British Cheese Awards at its first attempt and this feat was repeated in 2013, and it continues to win awards to this day. A Camembert style cheese it could easily be mistaken for its French counterpart (and often is) it has all the characteristics…the thin undulating rind, the vegetal aromas when ripe and the long lasting sweet slightly nutty taste. It was once described by Raymond Blanc as “the best Camembert in the world”.
Pitchfork Cheddar; First made in 2017, Pitchfork has rapidly become one of the most sought after cheeses in the UK. Made by brothers, Todd and Maughan Trethowan, who started out making Gorwydd Caerphilly in Wales, they moved to Somerset in 2014. Having found that the milk produced by the organically reared pedigree Holstein and Jersey herd at Puxton Farm was perfect for cheese making. Pitchfork has now joined the other three cheddars, Montgomery, Westcombe and Keens in the Slow Food Presidium of Artisan Somerset Cheddars. This is “the real thing” in the world of cheddars, it has a dense creamy texture with an acidic tang. The use of Jersey milk seems to give an additional dimension of creaminess to the long lasting taste. Little wonder that it won “Best Traditional Cheddar” at the British Cheese Awards in 2019 along with “Best British Cheese" at the World Cheese Awards 2019.
Beauvale; A gold medal winner at the British Cheese Awards in 2019 and gold at the World Cheese awards 2018 Beauvale is a soft creamy blue cheese made by Cropwell Bishop Creamery who are renowned Stilton makers. Like all new cheeses, Beauvale’s maker, Robin Skailes, took many months to perfect the recipe before releasing the finished product. Robin’s aim was to produce a soft mild blue cheese that would be quite different from the family’s Stilton and at the same time not copying Gorgonzola Dolce. This he has achieved, the strain of blue is certainly milder than Stilton and the texture though soft is firmer than a Gorgonzola. It has a wonderful melt-in-the-mouth texture and flavours that range from mellow butteriness to rich savoury with a hint of spice.
Michael’s Mount won a Bronze medal at the British Cheese Awards in 2019. Made by the multi award winning cheesemaker, Whitelake Cheese in Somerset, Michael’s Mount is new on the scene and is already making a name for itself. Only in its second year of production it regularly features on many cheese counters in specialist cheese shops and delis as well as on cheeseboards in many top restaurants. It is a lactic bloomy rinded cheese with a delicate fresh flavour when young and becomes more robust with age.
