Blade of Beef: A great slow-cooked beef cut for cooking enthusiasts. Blade of Beef comes from the shoulder of the animal and is a product made for slow cooking. The blade has become a real favourite of chefs who cook it slowly, getting internal temperature to approximately 92C; this allows the muscle to become soft and flaky. In the middle of the blade is a gelatinous natural sinew which melts to create real intense flavour and texture when cooked in this way.
Aubrey's Dry Aged Sirloin on the Bone: Selected from only the top percentage of beef cattle in the country and aged in the time honoured way to intensify flavour.
Free range pork cutlet: Selected from our free range pork from Suffolk. We only choose the female sweet gilt pigs, giving a lovely flavour, whilst the Southwold coast helps to give a naturally salty finish. Serve with lemon and sage for a classic dish.
Red wine gravy Jus: A great chef secret when time is short. A good quality gravy stock to help with your blade of beef cooking.
