Aubrey, our founder was the first butcher in Coventry to be granted a slaughter licence and we have been leaders of industry ever since. We were the first national catering butcher to offer a boutique butchery service and have won more awards than any other butchery company.
In a Coventry butchers shop where the ambitious Aubrey was determined to feed the city as well as he could throughout the 1930’s and on into rationing. Aubrey continued to grow the business to seven retail shops in Coventry, passing the reins to son Peter in the 1970’s.
Peter, a visionary, saw that food service would take off and invested in butchery training, bringing continental ‘seam butchery’ to the UK for the first time. This allowed Peter to purchase and utilise every part of the whole carcase and only select the best – a philosophy that holds strong today. We have been sustainable long before it became a buzz word!
Peter’s son Russell took over in 2012 and with the granting of the Royal Warrant, together with his chef background, a commitment to not only sourcing the very best ingredients but also improvement was born. Long synonomous with the best dry aging in the world (renowned meat scientist Prof. Chris Caulkins is quoted as saying Aubrey Allen dry aged beef is ‘the best example of dry aging in the world’) Russell has invested time and money into state of the art fridges and using science to bring you the best meat.
